Humans as well as search engines will read your links, so the words in your anchor text need to make sense. What the link says tells users and the SE what your page is about.

All the search engine gives significant weight to the anchor text on your pages, so inclusion of important keywords in the anchor text can make a big difference in the final ranking of your site pages. Keywords within the anchor text are also useful from links pointing to your website (backlinks). So when doing your link building campaign, write multiple options of the title and description of the link pointing to your website remember having all of your anchor text the exact same from all your links wont be the best approach.

It's important to make the most out of your link by choosing the right anchor text. If you are requesting links from others, have the code for your link all ready to go, easy for them to insert into their web page.

Yep, and it also plays and indicator whether the users will click or not click your links. I mean, anchor text can also plays an important role to tell or to inform Internet users on what information they will going to have if they'll going to click that link. It can also benefit you in gaining better rankings with those keywords in SERPs.
